Rice Pudding

another recipe from Grandma Knapp;

scald 1 qt milk
mix well and add to milk:
1 c sugar
1/4 t salt
1/4 c flour
1/2 t each of cinniman & nutmeg if desired
When thick, mix 1 egg with a little cold milk and stir in.
keep stirring until it just begins to boil.
turn off heat and add 2 c cooked rice
and 1 T vanilla

Yummy served warm with a scoop of ice cream.

Almond Joy

A great Family Home Evening treat! They are BETTER than almond joys and aren't full of sugar and a whole bunch of ingredients that you can't pronounce.
Store these in the freezer . Use a cookie scoop and scoop them out, or use a little silicone muffin mold, and put the base vanilla mixture in, and then put them in the freezer. While they are in the freeze, make the chocolate sauce. Pull the almond joys out of the freezer put an almond in the center and top it with chocolate sauce. Put them back in the freezer to set up.

Raw Food Real World, which has really good raw desserts.
For a vanilla almond joy:
3 C shredded unsweetened coconut
1 1/2 C almond meal-(almonds blended in the blender)
2/3 cup agave
1/3 C coconut oil
1 T vanilla
1/2 tsp sea salt
Combine all of the ingredients and stir until combined. Scoop out the dough with a cookie scoop.
Drizzle a chocolate sauce over these.
Chocolate Sauce
2/3C coconut oil
1/3 C cocoa powder
1 T vanilla
1/4 C agave

Potato Salad

4 lbs. potatoes, peeled, chopped, cooked
2 c. mayo
1 c. sour cream or yogurt
1 T. mustard
1 pickle, chopped
3 green onions, chopped
1 tsp. pepper
1 tsp. salt
dash garlic salt

I think I got this recipe from Relief Society.  One pickle is just not enough, though, and sometimes I put cucumber relish in it too.  It works really well with macaroni in place of potatoes too.

Cheese Rolls

This recipe came from Grandma Knapp.  We don't usually use hard rolls and bake in the oven, we just spread it on bread for a quick sandwhich.  It is really tasty melted on corn chips in the microwave too.  Kind off like nachos.  I use an 8 oz can of tomato sauce, half a can of olives and no onions.

1 lb. grated cheese
1 can tomato soup
1 can green chilis
1/4 c. oil
3 boiled eggs
6-8 small onions
chopped olives

Scoop out center of hard rolls and fill with cheese. Wrap in foil. Bake 200-250 for 20 min., 1 hr. if frozen.

Pumpkin Muffins

2 c. flour
1/3 c sugar
1 T. baking powder
1 tsp. cinnamon
1 tsp. ginger
3/4 tsp. salt
pinch allspice
3/4 c. pumpkin
1 egg
2/3 c. milk
1 T molasses
3 T. oil
1 tsp. vanilla

Mix dry and liquid seperate, then mix together until moistened. Bake at 350 for 15 min.

Roca Rectangles


 

Cover pan with foil-up sides too. Spray withoil then line with saltine crackers.

Boil 3 min: 2 cubes butter and 1 c. brown sugar
Pour over crackers and spread to cover.
Bake at 375 for 7 min. Let cool 5-6 min.
Sprinkle 1 1/2 c. chocolate chips over and bake 1 1/2 min. more.
Spread smooth and sprinkle with nuts.
Don't eat them all before they cool!
